Ecuadorian food: encebollado de pescado
This dish is one of many that all Ecuadorians love, and of course is one of my favourite dish when visiting the Coastal region of Ecuador! It is hard to translate it however we can literally say that Ecebollado de pescado is a onion fish soup. It is made with fresh tuna, yuca, tomatoes, onions, cilantro, spices and is served with curtido or pickled onions and tomatoes on top or mixed in with the soup.
It is a typical soup from the coastal region of Ecuador, specially you can find it in Guayaquil city, this dish is very common in there, and locals say that is good to eat it when you have a hangover. It is the best cure for it.
This is a great option to serve at breakfast, lunch, brunch or dinner together with a glass of orange juice or any other juice with exotic fruits.

Variations for encebollado can be made using different types of fish or seafood
If I can use one adjective to describe it, it would be: mouth-watering!
